1 cup cherry tomatoes, halved
1 cucumber, sliced
1 carrot, grated
Salt and black pepper to the taste
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1 and ½ cups turkey breast, cooked, skinless, boneless and shredded
In a salad bowl, combine the turkey with the tomatoes, cucumber and the other ingredients.
Then toss and serve for lunch.
