2 spring onions, chopped
½ pound white mushrooms
Salt and black pepper to the taste
4 eggs, whisked
1 tablespoon olive oil
½ teaspoon cumin, ground
1 tablespoon cilantro, chopped
- Heat up a pan with the oil over medium heat, add the spring onions and the mushrooms, toss and sauté for 5 minutes.
- Add the eggs and the rest of the ingredients, toss gently, spread into the pan, cover it and cook over medium heat for 15 minutes.
- Slice the Omelette, divide it between plates and serve for breakfast.
