Ingredients:

 
6 eggs

A pinch of salt

½ cup Coconut flour

¼ cup stevia

1/3 cup Coconut, shredded

½ teaspoon baking powder

1 cup almond milk

¼ cup Coconut oil

1 teaspoon almond extract

¼ cup almonds, toasted

2 ounces Cacaoa chocolate

Cooking spray

Directions:

 
  1. In a bowl, mix Coconut flour with stevia, salt, baking powder and Coconut and stir.
  2. Add Coconut oil, eggs, almond milk and the almond extract and stir well again.
  3. Add chocolate and almonds and whisk well again.
  4. Heat up a pan with cooking spray over medium heat, add 2 tablespoons batter, spread into a circle, cook until it’s golden, flip, cook again until it’s done and transfer to a pan.
  5. Repeat with the rest of the batter and serve your pancakes right away. Enjoy!
